The handle of this Japanese-style knife ($109) is machined from a solid block of aluminum, giving it clean lines and a tight build. When closed, the 2.5-inch stainless blade sits flush with the handle. The knife is so simple that it doesn't even have a lock—it opens and closes with friction.
